Linguine with Fresh Tomato Sauce


Serves: Prep: 15min |Cook: 15min |Total: 30min

3 tbsp extra virgin olive oil
1 sm onion, thinly sliced
3 cloves garlic, minced
2 lb tomatoes, peeled and chopped (about 6 tomatoes or 3 c chopped)
1 1/4 tsp salt
12 oz linguine
16 fresh basil leaves, torn into pieces
1/4 C grated parmesan


1.Heat 2 tablespoons of the oil in large saucepan over medium-low heat. Add onion and cook, stirring occasionally, until tender, about 10 minutes. Add garlic and cook 1 minute. Stir in tomatoes and salt and bring to a simmer. Cook until sauce begins to thicken, about 10 minutes.

2.Perpare pasta per package directions while sauce cooks, undercooking slightly. drain pasta well and add to simmering sauce. Cook until sauce has thickened and pasta is done, about 2 minutes. Add basil and remaining 1 tablespoon oil and toss to combine. Serve topped with cheese.


Cauliflower pizza

1 head of cauliflower
2 eggs
.5 cup of plain whole fat Greek yogurt (the thicker the better)
Salt Pepper for your taste
Garlic and/or onion is optional if you like it

Grate 1 head of cauliflower in a food processor. I used a small blender that has Grate option. I had to grate my cauliflower in several small batches.

I like to squeeze extra liquid out of the grated cauliflower. Then add the rest of the ingredients and beat them together – I used a hand mixer.

Spread mixture flat onto large round pizza tray lined with parchment paper, pushing into the edges creating a round form.

Bake on 400F for approximately 45-50 minutes until pizza is browning, drying out and stays together well. Do not bake less than 45 minutes.

Then put sauce, toppings and cheese and bake for another 10 minutes until cheese is melted and golden. I used a home-made pesto sauce and mozzarella cheese.


Vegan Cheese Dip

1 large sweet potato
1 cup of cashews (or cashew nut butter)
1/2 cup of water
3 Tbsp of nutritional yeast
1 small onion
1 garlic clove
salt and pepper

Soak cashews in water for 6 hours or overnight. Rinse them well. Peel and cook a sweet potato. Place cashews in Vitamix to make cashew butter.

Next, add all the other ingredients and mix them well.
Add salt and pepper to taste. You can also use this mixture as cheese sauce over past or macaroni.
